1 ½ cups quinoa flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
¼ cup milk
2 tsps. pure vanilla extract
1 ½ cups old-fashioned rolled oats

INSTRUCTIONS
1. Combine flour, baking powder, baking soda, ground cinnamon and salt in a bowl and set it aside.
2. Beat butter, granulated sugar, and brown sugar in a mixer bowl until smooth and creamy.
3. Add milk and vanilla extract
4. Add the quinoa flour mixture until combined.
5. Stir in oats until evenly mixed.
6. Use a cookie scoop (I used 1 tbsp. measuring spoon) to measure the cookie dough.
7. Roll each scoop into a small ball and place on a cookie sheet (I used parchment paper) and press gently to flatten it a little bit.
8. Preheat the oven to 350° F.
9. Place the cooled cookie balls 2 inches apart on your cookie sheet.
10. Bake for 8 to 10 min. or until the edges are golden brown.
11. Cookies might look doughy when taken out of the oven but they will eventually set as they cool down
12. Let the cookies cool down before tasting.
