1 Tbsp olive oil
1 pack (20 ounces) lean ground turkey
2 medium zucchini, quartered lengthwise and cut into ½" slices
1 medium onion, diced
3 garlic cloves, minced
1 large orange pepper, chopped into ½" squares
½ tsp dried oregano
1 can black beans, rinsed and drained
1 can diced tomatoes
1 small jar banana pepper rings, drained
½ tsp salt
2 tsp garlic powder
1 Tbsp balsamic vinegar

Heat oil in a large skillet

Add onions, orange pepper, zucchini, garlic and oregano. Cook 3 to 4 minutes, or until onions start to look opaque white

Add turkey and sprinkle with salt and garlic powder. Continue cooking, breaking the turkey into crumbles as it cooks. Cook approximately 5- 6 minutes, or until the turkey is cooked and vegetables are tender

Drain liquid out and stir in remaining ingredients. Continue cooking until hot, stirring occasionally
