½-1 onion, chopped
1 sm. zucchini, seeded and chopped
1 sm. yellow squash, seeded and chopped
1 med. red bell pepper, chopped
1 med. ear corn, cut off the cob (or you may use frozen)
½ stick butter
salt and pepper to taste

Directions:
Directions:
Chop onion; depending on size you might use half or whole onion. To seed the zucchini and yellow squash, cut lengthwise into fourths. Turn a piece on it's side and cut out the seeds, leaving as much squash as possible. Once all are seeded, chop into a med dice. Dice up red bell pepper. Cut corn off cob. Melt butter into a extra large skillet or saute pan. Add onions and peppers to the skillet and begin to saute; after about 2-3 minutes, add squash, stirring to mix with onions and peppers; then add corn. Season with salt and pepper. Cook to desired doneness, stirring occasionally; squash should not be mushy. This is a great side dish with most anything.

Several years ago, (maybe 2013?) coming home from a late Chemo treatment, we stopped at Seasons 52 Restaurant. I got roasted chicken, and this was the side. I came home and made some. It was so easy and good! I have been doing it ever since. Enjoy.
