1 egg
1/2 cup sugar
2 dessert spoons golden syrup (1dessert spoon equals 2 tsp)
1-1/2 cups milk
SR flour (Australian self rising (SR) flour is different that self rising flour in the U.S., for every cup of SR flour, substitute 1 cup all purpose flour and 2 tsp baking powder)

NOTE: You can't buy golden syrup in the U.S., but you can make your own simply:

Place 110g (1/2 cup) of sugar in a medium saucepan and add 125ml (1/2 cup) water. Cook, stirring, over low heat for 3 minutes or until sugar dissolves. Increase heat to medium and bring to a simmer. Simmer, without stirring, for 8-9 minutes or until mixture is golden.

Mix egg, sugar, golden syrup and milk together using an electric mixer. Add in flour 1/2 cup at a time until mixture is moderately thick, yet able to pour. Cook pikelets in a greased fry pan.


Serve with butter and/or jam
