Base:

125g butter (4 oz)
1 cup SR flour (Australian self rising flour - - in U.S. use 1 cup all purpose flour plus 2
tsp baking powder)
1 cup brown sugar
1 cup desiccated coconut


Filling:

1 tin condensed milk (1 - 14 oz can sweetened condensed milk in U.S.)
1 tbsp butter
2 dessert spoons golden syrup (one dessert spoon is equal to 2 tsp)

Topping:

250g (8 oz) Cadbury milk chocolate


NOTE: You can't buy golden syrup in the U.S., but you can make your own simply:

Place 110g (1/2 cup) of sugar in a medium saucepan and add 125ml (1/2 cup) water. Cook, stirring, over low heat for 3 minutes or until sugar dissolves. Increase heat to medium and bring to a simmer. Simmer, without stirring, for 8-9 minutes or until mixture is golden.

Preheat oven to 330º

For Base:

Melt butter, stir through the flour, brown sugar and coconut. Press into lined slice tin. (12" x 8" x 2" deep) Bake at 330º for 15 minutes.

For Filling:

Place all ingredients in a saucepan. Stir continuously over a low heat until mixture simmers and thickens. When base has cooled, pour caramel filling over. Return to oven for 8 minutes.

Topping:

Melt the chocolate and pour over cooled caramel layer. Put in refrigerator to set before cutting into squares.
