200g (a little more than 7 oz) dark chocolate
150g (5 oz)
5 eggs (separate whites from yolks)
3/4 cup caster sugar (not readily available in the U.S., to substitute put one cup
granulated sugar in food processor or blender and blend for 1-2
minute to create a very finely ground sugar, then measure
AFTER blending)
1-1/2 cups almond meal (in the U.S. use almond flour, almond meal is too coarse)

Preheat oven to 320º

Melt chocolate and butter together in a large saucepan. Stir in egg yolks, almond meal and sugar. Set aside. In a separate bowl, whisk egg whites until firm peaks form (or beat with your electric mixer). Fold egg whites through chocolate mixture. Pour into lined round 22 cm spring form tin (8" spring form pan - line bottom with parchment). Bake for 1 hour. Cake is done when skewer inserted in center comes out clean.
