1 sheet frozen puff pastry
All-purpose flour for rolling
Olive oil for brushing
1/2 cup white cheddar cheese, grated
4 - 5 plum tomatoes, sliced into 1/4-inch, drained
Salt
Pepper
Oregano, optional (Not on PD's)
2 tablespoons thyme, fresh, chopped
1/2 cup Parmesan cheese, freshly grated

Preheat oven to 375 degrees. Spray a baking sheet with vegetable oil. Remove puff pastry from freezer and allow to thaw for 20 minutes. Unfold the pastry on the counter and roll down, using enough flour to prevent sticking. Brush dough with olive oil, using a 1 1/2 - 2-inch biscuit cutter, cut rounds of dough. Place rounds of dough on prepared baking sheet and poke surface with a fork. Top each round with small amount of cheddar, then the tomato slice. Sprinkle salt and pepper to taste over the tomato, then sprinkle with pinch of thyme, (oregano, optional) and about 1 tablespoon of Parmesan. Bake for 15 minutes. Let cool for 2 - 3 minutes before serving.
