1 cup rolled oats
3/4 cup desiccated coconut (you can substitute shredded coconut)
1 cup plain flour
1-1/2 tsp bicarb soda (baking soda)
2 tbsp boiling water
1 cup sugar
125g (4 oz) butter
1 tbsp golden syrup

You can't buy golden syrup in the U.S., but you can make your own:

Place 110g (1/2 cup) of sugar in a medium saucepan and add 125ml (1/2 cup) water. Cook, stirring, over low heat for 3 minutes or until sugar dissolves. Increase heat to medium and bring to a simmer. Simmer, without stirring, for 8-9 minutes or until mixture is golden.

Preheat oven to 325º

Mix oats, flour, sugar and coconut together. Melt syrup and butter together in a saucepan. Mix soda and boiling water together and add to melted butter mixture and quickly pour into dry ingredients and mix. Roll into balls and place on a lined baking tray (line with parchment paper, leave room between balls for biscuits to spread.)

Bake for 20-25 minutes. After 10 minutes of cooking press each biscuit down with a fork.
