1/2 lb butter
1 cup icing sugar (in the U.S. the closest equivalent is powdered sugar, which is
similar, but not quite the same, as it has a bit of corn starch in it)
2 cups plain flour

Directions:
Directions:
Leave butter out of fridge till really soft. Mix with electric mixer till nearly white in color. Add in icing sugar and mix well again. Add in flour, one cup at a time, mixing after each addition. If mixture is still a little wet, add a little more flour. Roll mixture onto floured bench (like a sausage) and cut with a blunt knife into round biscuits. Bake in a slow/moderate oven (325ºF) for 20-25 mins.


NOTE: Biscuits (cookies to Americans) should be just lightly browned not too brown, or they will be rejects.

Grandma Kay is Josh Bate's Australian grandmother. Alicia and Josh had assorted cookies for the dessert at their wedding and Grandma Kay came from Australia and made these wonderful shortbread cookies for the wedding, as they are Josh's favorites.
