1 cup packed brown sugar
1 cup granulated sugar
1 cup Crisco (vegetable shortening)
3 eggs
3 cups all purpose flour
1 tsp salt
1 tsp baking powder
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp baking soda
About 1 cup buttermilk
2 cups old fashioned oats
1 cup raisins
1 cup chopped walnuts

Preheat oven to 350º

An hour or so before you want to start making the cookies, put the one cup raisins in a small saucepan, add 1/2 cup water. Bring to a boil over high heat, reduce heat and simmer for about 5 minutes, being sure not to boil all the water out. Remove from heat and set aside to cool.

Sift together the flour, salt, baking powder, baking soda, cinnamon and nutmeg. Set aside.

Using an electric mixer, cream sugars and shortening. Add eggs, one at a time, beating well after each addition. Drain the liquid off of the raisins into a one cup glass liquid measuring cup, then add buttermilk to the raisin water to make one cup of liquid. Add the flour to the sugar/shortening mixture, one cup at a time, alternating with the liquid, ending with the last of the flour. Beat well until smooth. Stir in the oatmeal, fold in the raisins and walnuts.

Drop by tablespoonsful onto a lightly greased baking sheet (or one lined with parchment paper), leaving a good 2" between each. Bake for about 12-14 minutes until lightly browned. Do not overbake. Remove to a cooling rack.

Grandma always simmered raisins before adding them to a baking recipe to plump them up. She told me "otherwise they take moisture out of the cookie and make it dry." Oatmeal raisin are just about my favorite cookie!
