1-2 pounds firm tofu
1/2 cup soy sauce
1/2 cup rice wine vinegar
2 teaspoons of cumin
1/2 teaspoon red pepper flake

Directions:
Directions:
1. Place tofu (as is in brick form) in sealable container.

2. Combine above ingredients pour over tofu.

3. Weigh down tofu to hold in place under the marinade and seal for 12 to 24 hours turning tofu every 3 hours.

4. Cut into small cubes and substitute for pork and chorizo in Pozole Verde Recipe.
