3/4 cup quinoa
1 (10 ounce) can enchilada sauce
1 (4.5 ounce) can green chilis, drained
1 (14.5 ounce) can corn kernels
1 (14.5 ounce) can black beans, drained and rinsed
3/4 teaspoon cumin
3/4 teaspoon chili powder
Salt and black pepper, to taste
3/4 cup shredded cheddar cheese, divided
3/4 cup shredded mozzarella cheese, divided

Directions:
Directions:
1. Cook quinoa according to package instructions; set aside.

2. Preheat oven to 375 degrees F.

3. Lightly oil an 8x8 or 2 quart baking dish or coat with nonstick spray.

4. In a large bowl, combine quinoa, enchilada sauce, green chilies, corn, black beans, cumin and chili powder; season with salt and pepper, to taste.

5. Stir in 1/2 cup cheddar cheese and 1/2 cup mozzarella cheese.

6. Pour into baking disk and cover in remaining cheese

7. Bake for 20-25 minutes

8. Serve immediately, garnished with avocado and tomato, if desired.
