1 onion
1-4 cloves of garlic
olive oil
¼ pound of ground beef or lamb
red wine
1 can of crushed tomatoes
1 cup of beef broth
parsley
basil
oregano
½ tsp of cinnamon
½ tsp of salt
½ of pepper
1 package of pastitsio macaroni or any long tube macaroni such as ziti or rigatoni
butter
½ cup of parmesan cheese
¼ tsp of nutmeg
sugar
3 eggs
3 cups of milk

Directions:
Directions:
First, make the sauce:

1. Chop 1 onion and 1-4 cloves of garlic. Sauté in olive oil until soft.

2. Add, 1/4 about a pound ground beef or lamb and brown it.

2. Add a little red wine, a can of crushed tomatoes, a cup of beef broth, chopped parsley, basil, and oregano, 1/2 tsp of cinnamon and salt and pepper to taste.

3. Lower the heat and simmer about 20 minutes.

4. Boil a package of pastitsio macaroni, or any long tube shaped macaroni such as ziti or rigatoni.

5. Drain, add 1/4 cup melted butter, 1/2 cup parmesan cheese (or similar)1/4 tsp nutmeg, salt, pepper, a pinch of sugar and three beaten eggs.

6. Mix until everything is mixed together and all the pasta is evenly coated.

7. Grease a 13" X 9" inch baking pan. Spread 1/2 of the pasta mixture over the bottom of the pan. Spread the sauce over the pasta, then spread the remaining pasta over the top.

Now make the cream (béchamel) sauce:

1. Heat 3 cups of milk over medium heat until bubbles start to appear around the edge.

2. In another pan, melt 6 tablespoons of butter.

3. Stir in 1/4 cup of flour, cool stirring about two minutes. Don't let it get brown.

3. Add the milk, boil, stirring constantly. Add a pinch of nutmeg, salt and pepper.

4. When it is blended, stir in 3 beaten eggs. Keep stirring vigorously until it gets thick - whisk is perfect for this job.

5. Add it to the top of the paste in the pan.

6. Sprinkle with 1/4 cup Parmesan cheese.

7. Bake at 350 degrees for 50-55 minutes until golden.
