Ingredients: 1/2 cup raisins 1/2 cup pitted dates chopped to size of raisins 1 cup orange juice 1/2 cup organic sugar 1/4 cup water 1 cup sugar 1 clove, 1 cardamom, a very small piece of nutmeg, A very small piece of cinnamon. 4 table spoon salted butter 3 Eggs 1 tsp vanilla essence 1 cup All Purpose flour 1 tsp baking powder

Directions:Take 1/2 cup raisins 1/2 cup pitted dates chopped to size of raisins 1 cup orange juice
Step 1) Soak Raisins and dates in orange juice for 2 hours.
For the caramel syrup: Take 1/2 cup organic sugar 1/4 cup water
Step 2) Heat the pan and add sugar. Allow it to caramelize. When its brown add the water and dissolve the crystallized sugar completely. Allow it to cool
Take 1 cup sugar 1 clove, 1 cardamom, a very small piece of nutmeg, A very small piece of cinnamon. Step 3) Grind all above ingredients above into nice powder
Take 4 table spoon salted butter 3 Eggs 1 tsp vanilla essence
4) Using a beater, mix the ingredients from step 3 and butter first until fluffy and then add eggs and finally vanilla essence and beat together.
Take 1 cup All Purpose flour 1 tsp baking powder.
5) Mix the All-purpose flour and baking powder and then add it little by little to the mix from step 4 . Fold it with spatula.
6) Squeeze out the raisins and dates from orange juice. Coat it with 1/4 cup of all-purpose flour.
7) Add the coated dates and raisins to batter and add 1 tbsp of orange marmalade and fold again.
8) Add the caramelized sugar syrup. It should be thick syrup.
9) Fold again and pour into a greased pan. (9-inch round should be good)
9) Place cashews on the top.
9) Tap the pan to release air bubbles and bake it at 350 F for 40 minutes. |
