4 large tomatoes (seeded and chopped)
2 large basil leaves (chopped)
1 large clove garlic (minced)
1/2 cup diced buffalo mozzarella (or shredded Parmesan)
Diced chives or green onions (to taste)
Juice of 1/2 lemon
1 tsp balsamic vinegar
1/4 tsp each salt and pepper
2 Tbs olive oil

1. Mix together and chill for 1 hour.

2. Serve with your choice of bread (Crusty toasted bread recommended)
