Ingredients: Crust: 1 cup all purpose flour (sifted) ¼ cup 10x powdered sugar ½ cup margarine (softened)
Filling: 2 eggs 1 cup granulated sugar 2 T. all purpose flour ½ t. baking powder ¼ cup lemon juice (fresh squeezed) Rind of one lemon (finely grated) 10x powdered sugar

Directions:Crust: Sift together flour and sugar and place in a food processor. Cut the margarine into small pieces and add to the mixture. Process until the dough forms a ball. The dough can also be mixed by hand. Press the dough into a 8" x 10" container. Spread evenly. Bake for approximately 15 minutes at 350º or 325º if using a glass container which I prefer. The crust will not be brown only set. Filling: Beat eggs with an electric mixer and add sugar. Continue beating until light and fluffy. Mix flour and baking powder and add to the egg/sugar mixture and stir by hand until well mixed. Stir in lemon juice and rind. Pour over cooked crust. Return to a 350º/325º oven and bake for approximately 15 minutes until the filling is set. Don't overcook. Place on a wire rack and cool to room temperature. Sift powdered sugar over the cooled bars and cut into desired shape. Store in the refrigerator and serve chilled. Freezes well. |
