½ cup finely ground dark roast coffee
1/3 cup dark chili powder
1/3 cup smoked paprika
½ cup kosher salt
2/3 cup packed dark brown sugar
2 tablespoons sugar
3 tablespoons granulated garlic
1 tablespoon ground cumin
1 teaspoon cayenne pepper

Be sure to mix the ingredients well. Make a bunch of it and store it in A LABELED mason jar. I buy boxes of peppercorns, salt, and spice seeds. I find myself using enough of them that it is cheaper and easier to grind them myself in something like a coffee grinder.

Texas BBQ is all about dry rubs. Here are my versions of rub recipes that I use for both grilling and smoking. You can easily tweak these recipes based on your preference. Maybe you like it a little spicier or substitute with a similar ingredient. I live in Texas so this is one of my most used BBQ beef rubs. Lately, I’ve been experimenting with adding cocoa but it is easy to get too much (trust me). The only time I do not use this rub is when I am smoking a brisket – for that I use the classic 7-2-2 cure.
