4-5 lb. pot roast
1 tbsp. salad oil
1 chopped onion
1 clove garlic
2-1lb. can tomatoes
2 cans chopped green chilis
½ tsp. oregano
1 tsp. salt
¼ tsp. pepper
4 15oz. red kidney beans
1 small can chopped black olives
1 small can green chili salsa

Directions:
Directions:
Brown roast in oil. Remove beef & sit aside. Sauté onion and garlic in oil. Place beef & all other ingredients back into sautéed onion. Cover & bake in 350º oven for 2 to 3 hours. Serve with flour tortillas, chopped green onions and shredded cheese and sour cream.
