Ingredients: 2 cups sugar 1 3/4 cups flour 2/3 cups cocoa 1 1/2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon salt 2 eggs 1/2 cup vegetable oil 2 teaspoons vanilla extract 1 cup boiling water Chocolate Frosting (recipe follows)

Directions:1. Preheat oven to 350º 2. Prepare two 9" round cake pans 3. Combine dry ingredients in a large mixing bowl 4. Add eggs, milk, vanilla, and oil 5. Beat at a medium speed for 2 minutes 6. Add boiling water and stir until blended (the batter will be thin) 7. Pour into prepared pans 8. Bake for 30 - 35 minutes or until wooden tooth pick inserted in the center of each cake comes out clean 9. Remove the cakes from the oven and place them on cooling racks for 10 minutes 10. Remove cakes from pans and cool completely 11. Frost with Chocolate Frosting |

Ingredients: 1/2 cup butter 2/3 cup cocoa 3 cups powdered sugar 1/3 cup of milk 1 teaspoon vanilla

Directions:1. Melt butter 2. Add coca and stir until smooth 3. Add powdered sugar and milk alternately, beating until the frosting is spreading consistency. Add additional powdered sugar or milk if necessary. 4. Stir in vanilla 5. Spread on cooled cake
Yield: approximately 2 cups of frosting |
