2 cans kernel corn, drained. (I prefer a sweet mix)
2 cans black-eyed peas, drained
1 can Rotel
½ red onion, small, diced
1 green pepper, diced
1 red pepper, diced
1 jalapeno, diced (I use a small/medium but depends on your heat tolerance 😊)
¾ - full bottle of fat free Italian dressing

Directions:

1. Mix all ingredients in bowl and cover. Use enough of the dressing to coat the bowl not be too much liquid in the bottom.

2. Refrigerate overnight.

3. Stir and serve with Frito Scoops or tortilla chips.
