Beef Enchiladas Casserole

! lb ground beef
! med yellow onion
! can rotel
! big bag fiesta cheese
2 pkgs flour tortillas 10 count pretty good size
1 pkg enchilada seasoning
2 cans enchilada sauce large
2 cans black olives
2 green onions(garnish)


Pico De Gayo

5 Tomatoes
4 Cucumbers
2 Yellow Onions
1 1/2 bushals of cilantro
3 Limes
1/2 jalopeno (seeded)
1/2 tsp chopped garlic
1/4 tsp season salt
1/4 tsp garlic salt
1/4 tsp salt (add salt to your liking)

Beef Enchiladas Casserole

Dice your yellow onion

Put it with your hamburger meat. Brown the hamburger, drain all the grease and add the can of rotel pkg of enchilada seasoning and half a can of the sauce. Mix well.

In a baking dish pour some of the sauce into it. Place a couple of the tortillas down and pour a little more sauce. Then add hamburger, cheese then tortilla, sauce hamburger cheese, tortilla, and sauce, and repeat till there is only torillas on top.

Pour sauce on top and place a good amount of cheese on there. Top with crumbled black olives.

Bake at 350 degrees until cheese is bubbly and golden.

Top with chopped green onions and serve with pico de gayo and rice and beans.

YUM!

Pico De Gayo
chop all the veggies up small combine them in a bowl add all seasonings
serve with lime flavored chips or with a meal
