Sauce
1 Tbls olive Oil
1 small onion (chopped)
1 garlic clove (minced)
1 lb ground beef (lean if possible)
2 cups of water
2 16 oz can of plum tomatoes (pureed in blender)
1 6 oz can of tomato paste
1/2 tsp dried basil
1/8 tsp pepper


Lasagna
1 cup Romano or Parmesan Cheese
12 oz dried lasagna noodles (uncooked)
2 cups cottage cheese (lowfat)
16 oz mozzarella cheese (lowfat)

Directions:

Sauce
1. Place 5 qt saucepan over medium heat and add olive oil
2. When hot add onion and garlic – sauté for 3 minutes
3. Add ground beef and cook 5 minutes (break up meat with edge of spoon) cook until loses pink color
4. Stir in 2 cups of water
5. Add remaining ingredients:
a. 2 - 16 oz can of plum tomatoes (pureed in blender)
b. 1 - 6 oz can of tomato paste
c. ˝ tsp dried basil
d. 1/8 tsp pepper
6. Simmer for 1 hour – can make in advance if needed


Place oven rack in the center position

Preheat oven 350 degrees

Lasagna
1. Spread 1/4 of sauce to bottom of 11X9X3 baking dish
2. Sprinkle 1/4 of Romano or Parmesan Cheese
3. Place 4 uncooked noodles over cheese (do not overlap – need room to expand)
4. Spread 1/3 of cottage cheese
5. Spread 1/3 mozzarella cheese
6. Repeat the layers 2 more times ending with remaining sauce and mozzarella cheese
7. Cover with foil and bake for 45 minutes
8. Remove foil bake for 15 minutes more
9. Enjoy
