2 T. EVOO
1/2 medium onion, diced
1 clove garlic, minced
1/4 t. ground cumin
1/8 t. ground coriander
1-15 oz. can black beans, drained and rinsed
2 T. water
1 T. plus 1 1/2 t. fresh lime juice
1 canned chipotle in adobo, plus 2 t. of the sauce
1/4 t. salt
2 T. coarsely chopped fresh cilantro, plus more for garnish
1/3 c. shredded Monterey Jack cheese

Heat oven to 425º.

Heat 1 tablespoon of the oil in a small oven proof skillet. Add the onion and cook 3 minutes. Stir in the garlic, cumin and coriander; cook for 30 seconds then remove from heat to cool slightly.

Combine half the beans, the water, lime juice, chipotle pepper and sauce, salt, the onion mixture and the remaining tablespoon of oil in a food processor; puree til smooth.

Transfer the bean mixture to same skillet, stir in remaining beans and cilantro. Top with cheese and place in oven until cheese is melted, about 15 minutes. Let the dip rest 5 minutes and garnish with cilantro.
