6 large squash
1 egg
1 can cream of mushroom soup
2 T. butter
1 small chopped onion
1 pack Ritz crackers
¾ cup of Velveeta cheese to taste
Salt and Pepper to taste

Directions:
Directions:
Wash and peel the end of the squash and cut UP. Place in the pot to boil with onion. Cook until tender. Drain and add butter, salt, and pepper. Spray glass dish and add squash. Beat egg and add milk and pour over squash. Then add a can of soup, cheese, and mix well. Crumble crackers over the top and bake at 350 for 30 minutes. Serves 8
