4 large russet potatoes
6 C milk
1 cube butter
2 tsp chicken bouillon
1 small onion, grated
Salt and pepper to taste
1/2 - 1 C cheddar cheese, grated

Garnish; sour cream, chives, bacon

Directions:
Directions:
Bake potatoes at 400
Remove potato meat from skins.
Bake skins until crisp; chop finely.

Heat milk and butter.
Stir in bouillon, onion and salt and pepper. Simmer over low heat.
Stir potato meat into milk mixture.

Simmer 10-15 minutes
Add cheese
To serve;
Place chopped potato skins into bowl.
Pour soup on top.
Garnish as desired.
