Italian Sausage Soup Recipe

Sausage:
1 lb pork tenderloin, coarsely chopped
1/4 C dry white wine
2 TBL chopped parsley
1 1/2 tsp crushed fennel seed
1/2 tsp dried hot red chilies
2 cloves garlic, minced

2 large onions, chopped

5 C beef broth (Divided)

1 1/2 C dry red wine
1 28 oz can Italian-style tomatoes
1 T dry basil
1 TBL sugar
1 Bell pepper, steamed, seeded and chopped
2 zucchini, sliced 1/4” thick
2 C dry bow-tie pasta

Directions:
Directions:
Combine sausage ingredients. Set aside.
Add onions, garlic and 1 C of the beef broth to stockpot. Boil on high heat until liquid evaporates and veggies start to brown, 10-14 minutes.
Stir in 3 TBL water. Cook until veggies brown again.
Add sausage ingredients and 1/2 C water

Stir gently until liquid evaporates and meat browns - 10 minutes.
Add remaining 4 C beef broth and remaining ingredients.
Simmer until pasta is tender -15 minutes.

Add salt and pepper to taste.
Serve with additional chopped parsley.
