Vegetable-Beef Barley Soup Recipe

1 lb ground sirloin
1/2,C chopped onion
2 carrots, sliced
2 cloves garlic
6 C beef broth
6 oz tomato paste
2 TBL fresh parsley
1/2 uncooked pearl barley
2 C water
2 C frozen corn
1 C other vegetable (peas, green beans, etc.)

Directions:
Directions:
Cook first four items together with a spritz of oil until meat is no longer pink.
Add broth, tomato paste, parsley, barley and water.
Simmer one hour until barley is tender.
Add corn and cook 10 minutes longer.
Add second vegetable, cover and cook 10 minutes longer.
