3 c Grated Zucchini (Squeeze excess moisture out through cheese cloth)
2 c Panko Breadcrumbs
1/4 c Finely Grated Parmesan
2 teaspoons Finely Chopped Fresh Basil
2 teaspoons Finely Chopped Fresh Oregano
2 teaspoons Minced Garlic
2 teaspoons Kosher Salt
1/2 teaspoon Ground Black Pepper
4 eggs
1/4 c Whole Milk
1/4 c Heavy Cream
1/4 c Vegetable oil (for pan frying)

Sauce:
1 c sour cream
2 Avocados
1/4 c Green Chili Sauce

Fritters:
In a large bowl, mix zucchini, panko, parmesan, basil, garlic, oregano, pepper, and 1 teaspoon of the salt.
In another bowl, whisk the eggs, milk, and cream together, and then stir the egg mixture into the zucchini mixture. If the mixture is too wet to form a patty, add more panko to the mixture about 1/8 c at a time.
Heat the oil in a pan over medium heat.
Make patties with the zucchini batter and add to hot oil. Fry until golden brown, 3-4 minutes per side.
Remove fritters from pan and set on paper towels to absorb excess oil; sprinkle fritters with the remaining salt.
Serve with a dollop of avocado sauce (or plain sour cream)

Avocado Sauce:
Mash avocado in a bowl until no large chunks remain
mix in sour cream and green chili sauce (to taste)

Excellent appetizer or even served as a side. I prefer to use Trader Joe'sİ Green Dragon sauce for the avocado mixture.
