3/4 cup butterscotch chips
1 stick unsalted butter, cubed
1-1/4 cups powdered sugar
2 whole large eggs
3 large egg yolks
1/2 cup all-purpose flour
1 teaspoon vanilla

Vanilla ice cream and caramel sauce

Directions:
Preheat oven to 425º. Combine butterscotch chips and butter in medium size microwave-safe bowl. Microwave on high for 1 minute. Stir well to combine.

Sift in powdered sugar and stir well. Add eggs and egg yolks and stir well to combine. Add flour and vanilla and give the mixture a final good stir until all ingredients are incorporated.

Spray 4 small glass bowls or ramekins (1 cup size) with non-stick cooking spray. Evenly distribute batter between the 4 bowls. Place bowls on baking sheet and bake for 17-18 m or minutes or until tops begin to brown.

Let cool for 2 minutes and then slide a knife around the edge of each bowl to loosen the cakes. Be careful-they are hot! Using a hot pad or dish towel, carefully invert each bowl onto a small plate and tap until the cake comes out.

Top each cake with a scoop of ice cream and drizzle with caramel sauce.
