¼ cup olive oil
½ shallot, minced
2 garlic cloves, minced
2 tablespoons vodka
1 teaspoon red pepper
½ cup tomato paste
1 cup heavy cream
¼ cup basil, chopped
1 pound favorite pasta, just slightly undercooked plus 1 cup pasta water
2 tablespoons butter
Parmesan cheese
Salt

Directions:
Directions:
In a large skillet pan, sauté shallots and garlic in oil. Add vodka and cook for 2 minutes. Then add tomato paste, heavy cream, red pepper, Parmesan and salt until smooth. Add pasta, pasta water and basil. Stir in butter. Plate and sprinkle more Parmesan cheese.
