5 eggs
Basil, chopped
Parsley, chopped
Parmesan cheese
Olive oil
Flour
1 pound, chicken breasts, pounded thin
½ pound prosciutto, optional
1 pound fresh mozzarella, sliced
2 large tomatoes, sliced
3 cloves garlic, minced
½ cup white wine
½ cup chicken stock
2 tablespoons butter

Directions:
Directions:
Heat oil in a large sauté pan. Mix eggs, basil, parsley and cheese in a small bowl. Dredge the chicken into the flour, then into the egg mixture and into the sauté pan until golden brown on both sides. Line chicken onto cookie sheet and put a slice of prosciutto, mozzarella and tomato on each one. Next mix minced garlic and oil into small dish and drizzle on top of each piece of chicken. Then sprinkle with Parmesan cheese. Pour white wine and chicken stock into the cookie sheets along with the butter.
Bake at 450º for 15 minutes. Transfer to a serving platter and pour excess sauce from cookie sheet onto the chicken.
