¼ cup Brown or White Sugar
3 tbsp. Cocoa Powder
3 tbsp. Cornstarch
¼ tsp. Salt
½ cup Heavy Whipping Cream
2½ cups Milk
1 cup Semi-Sweet Chocolate Chips
¾ tsp. Peppermint
For Garnish: Whipped Topping and crushed Candy Canes

In a medium saucepan, whisk together sugar, cocoa, cornstarch, and salt. Pour in milk and cream, whisk in to combine on a medium heat. Bring to a simmer and add chocolate chips stirring continuously. Simmer for 2-3 minutes or until pudding thickens. Remove from heat and stir in peppermint.
Divide pudding between serving dishes, and cover with plastic wrap. If you let the plastic touch the pudding it will prevent a film from forming on pudding. Refrigerate till cooled, garnish and serve.
