Gluten Free Option


Ingredients:

1 3/4 cups of sugar
1 3/4 cups flour
3/4 cups cocoa
1 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 cup oil
2 eggs
1 cup milk
2 tsp vanilla
1 cup boiling water

For gluten free recipe:
use Gluten free flour (Bulk Barn all purpose gluten free is excellent)
add 1 tsp guar gum
add an extra 3/8th tsp of both baking soda and baking powder and a 1/2 tsp of Vanilla and a bit more milk and /or boiling water up to 1/8th of a cup (gluten free always needs a bit more liquid)

Mix all dry ingredients together, add oil, eggs, milk and vanilla and beat on medium speed for 2 minutes. Add boiling water, mix until completely combined. Pour into pan , bake at 350º for 30 - 35 minutes (varies depending on oven). Until toothpick inserts and comes away clean.

I use a bunt pan, and it is great with just a glaze icing or dusting of icing sugar.

I got this recipe from a friend and it never fails....my own modification for gluten free. I have even cut the recipe in half and made just a dozen cup cakes...
