500 g pork belly with skin on
1/2 cup soy sauce
4 slices ginger
1 cup water
1/2 cup cooking sake
4 garlics crushed
1 leek
1/2 cup mirin

Directions:
Directions:
Tie pork belly using string with fat on the outside.
Blanche pork belly for 10 minutes in water.

In pressure cooker, add soy sauce, water, sake, mirin, leek, ginger and garlic.
Add pork belly and Cook on manual for 90 minutes on high pressure.
Remove pork belly and pan fry until all sides are browned.
Cool pork.

Transfer pork and sauce to a large container and refrigerate overnight.
Skim off fat, transfer pork to cutting surface and reserve sauce for eggs.
Reheat pork.
