½ cup butter or margarine
½ cup chopped onion
1 16 oz. pkg. frozen hash brown potatoes
1 can Cream of Chicken soup
1 soup can of milk
1 cup shredded cheddar cheese
1 sm. bell pepper cut in strips dash of black pepper
1 cup crushed cracker crumbs--divided

Directions:
Directions:
In a skillet, melt butter, saute onion until tender, stir in potatoes, soup, and milk. Add cheese, green pepper, black pepper, and 1/2 cup- of cracker crumbs. Pour into a shallow casserole dish. Top with remaining crumbs. Bake at 375 degrees for 35-40 minutes. Best served warm. Yield: 6-8 servings
