1cup red lentils washed
1 onion
2 Chillies
3/4 tsp mustard seeds
1/3 tsp turmeric
Asoefetida 1/4 tsp (optional)
1/2 cup diced tomatoes or canned tomatoes
Salt to taste
2 tbs oil

Directions:
Directions:
1 Bring 3 cups of water to boil.
Add washed lentils and boil
Skim off foam from time to time.
When lentils are soft add garlic cloves to last boil.

2 Prepare chutney

Sauté onions in oil
Add mustard seed and allow to splutter
Add chillies, asefetida, tomatoes, salt
and whole garlic.

3 Add lentil mixture to cooked chutney and
cook for further 5 minutes
Add more salt if needed.

4 Garnish with cilantro/dhania.

Dal may be prepared and frozen after boiling the lentils as above .
Cool and freeze and when needed you could add the chutney with added garlic and when done garnish with cilantro.
Or you could freeze the finished Dhal as is.
Note: you could add about 1/2 cup spinach or eggplant to Dhal.
Note : Red lentils cook very quickly.
There are a variety of other dhals like pea, chana, masoor and moong dahl.
