2 Ripe Mangoes
2 Cup Vanilla Ice Cream

- Peel the mango skins and cut them into medium size pieces
- Discard the pit
- Flash Freeze the mango pieces and store them in a freezer container for later use
- The frozen mangoes can be stored in a freezer for a few months

Just before you are ready to serve the mango ice cream:
- Place the frozen mangoes in a heavy duty blender.
- Add vanilla ice cream to the blender.
- Use the setting for Sauces (or similar setting) in your blender
- Blend until the frozen mangoes are thoroughly grounded and mixed with vanilla ice cream
- Enjoy!

This is a favorite of both Raj and Revathy

Mango is naturally sweet and usually does not require additional sugar; optionally you can add simple syrup to taste before blending.

You can substitute other fruits (jack fruit, pineapple, blue berry, pomegranate etc.). You may need to add simple syrup to taste and the consistency may differ.

Frozen fruits take a toll on the blender and you do need a heavy duty blender like blend-tec (Note: I am not endorsing Costco)
