1-1/4 cup all-purpose white flour
1 cup whole-wheat pastry flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup (1/2 stick) unsalted butter, room temperature
3/4 cup white sugar or honey
2 eggs, room temperature
1/2 cup sour cream
1 teaspoon vanilla extract
3/4 cup mashed ripe banana (3 large)
1/2 cup finely chopped walnuts (optional)

Directions:
Preheat oven to 350 degrees. Butter and flour a loaf pan. Sift and measure the flours, then sift again with the baking soda and salt. Using a mixer, cream the butter and sugary (or honey) until light and fluffy. Beat in the eggs one at a time, then the sour cream and vanilla extract. Stir in the banana and nuts if using. Add the flour mixture and stir just until combined, do not over mix. Spoon batter into prepared pan. Bake 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely
