1 medium potato
1 cup whole milk
1/4 cup (1/2 stick) unsalted butter
1/4 cup honey
1/2 cup warm potato water
1 teaspoon honey
2-1/4 teaspoons (1 package) active dry yeast
2 eggs, room temperature
1/2 teaspoon salt
5-6 cups all-purpose white flour

Peel the potato and cut into chunks. Put in a saucepan, cover with water, bring to a boil and cook until well done. Drain the potato, saving 1/2 cup of the cooking water. Mash the potato; you should have about 1 cup. Heat the milk and butter until the butter melts, either on the stove top or in the microwave. Add the 1/4 cup honey and stir to dissolve; set aside to cool to room temperature. Put the 1/2 cup potato water, 1 teaspoon honey and the yeast into the bowl of a stand mixture and set aside to proof 10 minutes. Using the paddle, stir in the 1 cup mashed potato, milk mixture, eggs, salt and 2 cups flour. Switch to a dough hook. Add enough flour to make an elastic dough. Knead 10 minutes. Cover bowl and let dough rise until doubled in bulk, about 1 hour. Lightly oil a muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Cover with a towel and allow to rise an additional 1/2 hour. Preheat oven to 425 degrees. Brush with melted butter. Bake in preheated oven for 10 to 15 minutes, until golden brown.
