1-1/4 cups whole milk
1/4 cup (1/2 stick) unsalted butter
1/4 cup white sugar
1/2 teaspoon salt
2 cups bread flour
2-1/4 teaspoons (1 package) active dry yeast
2 eggs, beaten
2 cups whole-wheat flour

Directions:
Directions:
Heat the milk, butter, sugar and salt, until the butter melts (either in a pan on the stove or in the microwave); set aside and cool to room temperature. Put the bread flour and yeast into the bowl of a stand mixer; mix well. Add the milk mixture and beat until smooth. Add the eggs and beat again. Switch to a dough hook and add enough whole-wheat flour to make a soft dough. Chill the dough overnight. (If desired, the dough can be shaped and baked right away.) When ready to bake, shape the dough into 32 balls. Put on a greased 10 x 15-inch baking pan and put in a large plastic bag to proof; let rise until doubled in bulk (this may take up to 2 hours). Preheat oven to 350 degrees. Bake rolls 12 minutes.
