3 sheets puff pastry
1 cup heavy cream
1/2 cup white sugar
3 tablespoons cornstarch
6 egg yolks
1 orange, zest of (optional)
1 teaspoon vanilla extract
Powdered sugar

Directions:
Directions:
Preheat oven to 375 degrees. Lightly grease 12 muffin cups. Cut puff pastry into 12 squares and use to line the muffin cups; refrigerate. In a saucepan, combine cream, sugar, cornstarch and vanilla. Cook, stirring constantly, until the mixture thickens (do not boil). Place the egg yolks in a medium bowl. Slowly whisk in 1/2 cup of the hot cream mixture into egg yolks. Gradually add egg yolk mixture back to remaining cream mixture, whisking constantly. Cook, stirring constantly, for 5 minutes, or until thickened. If desired, stir in orange zest. Cool 5 minutes. Fill pastry-lined muffin cups with mixture and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top
