Strawberry Mousse Pie Filling |

Ingredients: 4 ounces white chocolate, chopped 2 tablespoons milk 4 ounces cream cheese, room temperature 2 tablespoons white sugar 1/2 cup strawberry puree (see below) 1/2 cup heavy cream 1 prebaked 9-inch pie shell

Directions:Put a bowl in the freezer to chill for beating the cream. Put the white chocolate and milk in a microwave-safe bowl and heat until melted, stirring every minute. Put the cream cheese and sugar in a large bowl and beat until fluffy. Beat in the chocolate and then the strawberry puree. Get the bowl out of the freezer, pour in the cream and beat until stiff (no need to clean beaters). Fold the beaten cream into strawberry mixture. Spoon into pie shell and chill at least 4 hours before serving. Can spoon leftover strawberry puree as a sauce on individual pie slices. |

Ingredients: 3 baskets fresh strawberries 1/4 cup white sugar 2 teaspoons lemon juice

Directions:Freeze 2 baskets of the strawberries, then thaw (this helps break down the cell walls). Mash the strawberries well and then strain—you need 1-1/2 cups strawberry juice. Cook the juice down to 1/4 cup. Add the sugar and stir until it dissolves Mash the remaining strawberries to make 3/4 cup mashed berries. Add the juice-sugar mixture and lemon juice. |
