3 egg yolks
1/2 cup white sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons cocoa
2-1/4 cups whole milk
4 ounces semi-sweet chocolate, chopped up (or chips)
1 tablespoon unsalted butter
1 teaspoon vanilla extract
1 prebaked 9-inch pie shell

Directions:
Put the egg yolks in a medium bowl. Put the sugar, cornstarch, salt and cocoa in a medium saucepan and whisk to combine thoroughly. Whisk in about 1/2 cup of the milk and mix well. Whisk in the rest of the milk and cook over medium heat, stirring constantly with a spoon (otherwise it will stick to the bottom of the pot) until the mixture comes to a boil. Whisk about 1/2 cup of the hot mixture into the egg yolks, then whisk egg yolks into rest of mixture in the pan and cook until it almost comes to a boil, about 5 more minutes. Remove from heat and add the chopped up chocolate and the butter. Stir until the chocolate melts. Add the vanilla extract. Pour into the pie shell. Cover with plastic wrap and chill in the refrigerator at least 4 hours or overnight. Serve with whipped cream.
