5-6 tart apples, peeled, cored and sliced (can use a mix of tart and Fuji apples)
1/2 to 3/4 cup sugar, depending on how sweet you want it
1-3 teaspoons cinnamon, depending on how cinnamony you want it

TOPPING:
3/4 cup all-purpose white flour
3/4 cup oatmeal
3/4 cup brown sugar
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter
1/2 cup chopped walnuts, if desired

Directions:
Directions:
Preheat oven to 375 degrees. Toss together the apples, sugar and cinnamon. Put the mixture in a buttered pie pan or casserole dish. Let sit about 20 minutes, until some juice is released from the apples. Make the topping: Combine the flour, oatmeal, sugar and salt; add walnuts if desired. Cut in the butter until it resembles coarse crumbs (can use food processor if you have one) Sprinkle topping over apples. Bake 40-50 minutes until topping is golden and filling is bubbling.
