2 cups sifted cake flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1-1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
1 cup sour cream, room temperature
Frosting of choice

Preheat oven to 375 degrees. Butter two 9-inch round cake pans and line bottom with parchment paper or wax paper. Sift and measure flour; sift again with the baking powder, baking soda and salt. Using a mixer, cream the butter and sugar in a large bowl. Beat in the eggs, 1 at a time. Add the vanilla extract and beat until light and fluffy. Make sure sugar granules have completely dissolved (check by rubbing batter between your fingers_. Add the dry ingredients in 3 portions, alternating with the sour cream. When all the ingredients have been added, beat at medium speed for 1 minute. Pour into prepared pans. Bake 25 minute, or until a toothpick inserted in the center comes out dry. Cool on racks 15 minutes. Remove from pans and cool completely before frosting.

DELUXE SOUR CREAM CHOCOLATE CAKE: Omit baking powder and increase baking soda to 3/4 teaspoon. Add 2 ounces unsweetened baking chocolate, melted, to the butter-sugar mixture.
