1 lb chicken cut in 1" cubes
1 20 oz can pineapple chunks, reserve liquid
1/3 c juice from canned pineapple
2 t corn starch
1/3 c apple cider vinegar
1/3 c ketchup
3 t fresh ginger minced, divided
1 garlic crushed
1/2 t salt
3 T brown sugar
1 red bell pepper cut in large 1" cubes
1 yellow bell pepper cut in large 1" cubes
1/2 medium onion sliced in rounds

To prepare for freezing:
1. Bag up cubed chicken
2. combine vinegar, ketchup, 1 1/2 t ginger, salt, & brown sugar
3. bag chunks of bell pepper, onion & 1 1/2 t ginger
4. Put can of pineapple in the pantry
4. prepare a baggie of rice pilaf
Put all baggies in one large gallon bag and Freeze

Thaw in refrigerator. Begin preparing rice. Brown chicken in a skillet. Remove chicken and deglaze the pan with the vinegar mixture. Whisk corn starch into 1/3 c of pineapple juice from can add to vinegar mixture. Add bag of bell pepper/ onions & drained pineapple chunks. Return chicken to sauce pan & heat through. Serve over rice pilaf
