3 lbs.potatoes
1/4 lb. smoked bacon
3 eggs
1/2 baguette
1 cup flour
1 ts salt

Directions:
Directions:
Peel and grate raw potatoes, squeeze out juice. Cube bacon and heat till glassy, then let cool. Beat eggs and pour over cubed bread, let soak a while. Combine potatoes, bacon, bread, flour and salt into a loose dough. From it form round dumplings, rolling them in flour until they hold their shape. Place them into boiling salted water and let simmer about one hour.
