2½ lbs. potatoes
2½ cups flour
1 egg
1 egg yolk
1 ts salt
16 plums
16 sugar cubes
4 Tbs butter
½ cub breadcrumbs
4 Tbs sugar


Directions:
Directions:
Cook, peel and mash potatoes and let cool. Adding flour, eggs and salt. Knead into a smooth dough. Roll out dough to the thickness of a finger and cut into squares.

Remove pits from plums, replace each pit with a sugar cube and place on dough squares. Fold in ends and with well floured handsnform smooth round dumplings, place them in boiling salted water and simmer from 12 to 15 minutes. In a shallow frying pan heat butter and brown bread crumbs lightly, add the drained dumplings, cover and fry for about 5 minutes, add sugar.

Instead of fresh plums, other fruits like apricots or peaches can be used.
