Beets (raw)
1 Red Onion
1 Jalapeņo
Oregano
White Vinegar
Sea Salt

Directions:
Directions:
1: Roast or boil beets and allow to cool

2: Peel beets and cut into cubes about 1/2" on each side

3: Put beets in a mason jar (or anything to macerate) along with sliced jalapeņo, onion, oregano (and anything else you might want to add)

4: Boil vinegar with sea salt (you should be thinking like 1 tsp salt per mason jar)

5: Pour hot vinegar / salt mixture over beets and allow to macerate over night

Beets keep reasonably well but have a tendency to get soft

You can substitute a 1:1 blend of orange juice and lime juice for the white vinegar for a more citric flavor
