Pitta breads
2 T olive oil
1 lb tomatoes, sliced thickly
1/2 cucumber, halved lengthwise and sliced
6 radishes
spring onion/scallion, finely chopped
freshly squeezed juice of 1/2 lemon
pinch of salt
2 T chopped flat-leaf parsley
2 t ground sumac

Directions:

Slice the pitta around its edges to form two thin halves. Brush with oil and grill/broil under medium heat for 2-3 minutes until golden-brown and crisp. Cool, then tear into small pieces.

Toss together the tomatoes, cucumber, radishes, and spring onion/scallion in a serving bowl.

To make the dressing, mix together olive oil and the lemon juice, season with salt and pour over the salad. Mix in the parsley.

Sprinkle with the sumac and serve with pittas (I recommend not adding the pitas to the entire salad so that you can keep them from becoming soggy, rather add to each portion).
